Chef’s Column – Jumbo Lump Crab Cakes

If you want to create the same experience for your dinner guests or perhaps just toss in a wow-factor for a casual family meal, our specialty Jumbo Lump Crab Cake is a great place to start. If you’re ready, it’s time to cook like a legend!

To start, you’ll need Shula’s specialty Crab Cake Mix, which we’ve outlined below, plus Clarified Butter, Remoulade Sauce, and a Lemon Wrap.

To make a truly legendary Crab Cake Mix that yields approximately 21, six ounce Crab Cakes, combine the following ingredients in a large mixing bowl:

6 oz. of Mayonnaise, 6 Whole Fresh Eggs, 2 oz. of Worcestershire Sauce, 2 Tablespoons of Florida Bay Seasoning, 2 Tablespoons Fresh, Finely Chopped Parsley, 11/2 Teaspoons Dry Mustard, and 2 Tablespoons Fresh Lemon Juice.

Next, fold in 3 cups of Panko Bread Crumbs, 3 pounds Jumbo Lump Crab Meat, cleaned and drained, and 3 pounds Super Lump Crab Meat, cleaned and drained, without breaking up the Crab. Allow the mixture to rest and the bread crumbs to activate for 30 minutes prior to shaping and cooking.

When ready, place butter in a nonstick skillet and sear Crab Cake on one side. Turn and place in oven at 400 degrees for approximately 5 minutes or until heated through to 165 degrees, turning again when necessary. Place the Crab Cake on a plate, garnish with a Lemon Wrap and Remoulade Sauce, and serve!
