Chef’s Column – Shula’s
Next time you visit Shula’s Steak House in the Naples Hilton I recommend the 24 oz. Porterhouse. Not only is it Legendary Coach Don Shula’s favorite steak, it also gives you the best cuts of beef on one steak. It has a strip steak on one side and a filet on the other, the strip side is widely known as a New York Strip and the Filet Side Filet Mignon.
If you have never had a Porterhouse then definitely have your first at Shula’s, they are known for purchasing only the best beef available. The flavor is so good it will keep you coming back, if the 24 oz. Porterhouse sounds too small it is also offered in a 48 oz. size that will put you in an elite club of 32,000 people that have eaten the 48 oz. nationwide.
24 oz. Porterhouse – bon appetit
Season both sides of the Porterhouse with Shula’s seasoning salt. Place the steak on a TEC. Grill one minute on each side rotating the steak half a turn after thirty seconds to get perfect grill marks. Take the steak off the grill and place in a convection oven set at 450 degrees. To achieve a medium rare steak leave in the convection oven for seven
to eight minutes. Remove from oven and let rest on a cooling rack on top of a sheet pan for one minute. Brush the porterhouse lightly with whole butter and serve.
